I'm one of those eclectic Wiccans who people hear about so much. My own view (not necessarily the same as every other Wiccan out there) is that the Divine is essentially unknowable as it's so vast and beyond human comprehension. However, it manifests as both Male and Female, God and Goddess, which in turn can manifest in innumerable ways to different people. Another way it's described is that the Divine is like a gem with an infinite number of facets, and that the different gods and goddesses are those individual facets. We can approach the Divine through those facets or gods and goddesses but they are just a small fraction of the totality that is the Divine.
It's sometimes called "soft polytheism". It's also often summarized in Dion Fortune's immortal words: "All gods are one God, all goddesses are one Goddess."
Edited to add: it's also sometimes called panentheism.
